Why theTurkey?

Do you ever wonder when this whole Turkey thing started? And why do we continue to eat Turkey, year after year for Thanksgiving and other holidays? Why not eat meatloaf or a special casserole that your family makes?

Although, the pilgrims held the first feast in 1621, American’s didn’t start eating Turkey on Thanksgiving until the mid 1800’s. No one knows for sure why the Pilgrims and the Indians ate Thanksgiving Turkey but we do know that the Indians started off eating Venison. The Pilgrims called any type of "wild fowl" , Turkey whether it was duck or geese, any type of meat was referred to as Turkey.

We can thank a famous, editor and writer, Sara Josepha Hale, who pushed to make Thanksgiving a National Holiday. She also published recipes for turkey and stuffing and pumpkin pie and started traditions that had nothing to do with the colonists. I like holiday traditions and look forward to that Thanksgiving meal every year, especially the Turkey. With so many resources at hand, it’s a lot easier to have a delicious Turkey these days.

We westerners are involved in these days with our activities, time is of the essence when preparing a Thanksgiving meal. I am so thankful that Cole’s Barbeque can take care of my Turkey needs and it can be shipped right to my door!

Salsa isn't just a dance!


Salsa (the yummy sauce, not the dance) originated with the Inca people in the late 1500’s. Salsa traditionally was a combination of chilies, tomatoes and other spices. Today~ however, the types and varieties of salsa are endless.

Mexican salsa can refer to pico de gallo – a fresh, uncooked condiment made from chopped tomato, onion, and sometimes chilies. There are red salsas (salsa roja, tomato-based), and green salsas (salsa verde, tomatillo based).

“Fruit” salsas are all the rage! Mango salsa, pineapple salsa and peach salsa are delicious! They make great appetizers – try them poured over cream cheese with tortilla chips or as sandwich toppers. They are even more delicious when they accompany pork tenderloin or turkey, broiled fish or grilled chicken.

Black bean and corn salsa is delicious with brisket tacos. Add mild green chili salsa to a vegetarian burrito for a wonderful twist.

MyPower Hosts Event - Cole's Barbeque To Cater


Mypower is hosting a luncheon at Big Cedar Country Club on Thursday, November 5th for the community leaders of Fairfield, Texas and Freestone county.

Cole's Barbeque, the barbecue restaurant located in Freestone county, will be catering this event serving their famous mesquite smoked bar-b-q for this event.
Mypower is opening a natural gas fired power plant in Freestone county. This event is a vechcle for the community leaders of Freestone county to introduce the power plant, which will employ hundreds of people during the construction phase of opening this facility. Mypower representatives will be on hand to explain the timetable and answer questions from community leaders.

The Fairfield Industrial Development Corporation was instrumental in bringing Mypower into the Freestone County community.

The FIDC connects businesses to the community of Fairfield, Texas and provides relocation strategies, demographics, property searches and more.
